Apricot and Coconut Muffins 

 

Apricot and coconut muffins topped with smooth cream cheese icing, apricots and shredded coconut.

Recipe:

 Ingredients  Makes 12  Makes 36
 Bake One! Muffin Mix  800g  2400g
 Water  330ml  990ml
 Apricot Halves, mashed  270g  810g
 Shredded Coconut  40g  120g
 Cream Cheese  240g  720g
 Icing Mixture  20g  60g
 Apricot Halves, canned  For Garnish  For Garnish

Directions:

Muffins:

  • Pre-heat oven to 180 deg C conventional or 160 dec C fan forced.
  • Place water then Bake One! Muffin Mix in a mixer bowl.
  • Beat the mixture on low speed for 1 minute.
  • Scrape the bowl, continue mixing on high speed for 1 minute.
  • Fold in mashed apricots and coconut until mixed through.
  • Line standard 12 cup muffin pan with paper muffin cases.
  • Spoon mixture evenly into muffin cases (approx. 100g).
  • Bake for 15-20 minutes until baked. Turn out to cool.

Cream Cheese:

  • Place cream cheese and icing mixture in a mixer bowl.
  • Whisk on high speef for approx. 2 minutes until light and fluffy in texture.

Finishing:

  • Spoon or pipe cream cheese icing on top of muffin.
  • Place apricot on top of the icing.
