Apricot and coconut muffins topped with smooth cream cheese icing, apricots and shredded coconut.

Directions:
Muffins:
- Pre-heat oven to 180 deg C conventional or 160 dec C fan forced.
- Place water then Bake One! Muffin Mix in a mixer bowl.
- Beat the mixture on low speed for 1 minute.
- Scrape the bowl, continue mixing on high speed for 1 minute.
- Fold in mashed apricots and coconut until mixed through.
- Line standard 12 cup muffin pan with paper muffin cases.
- Spoon mixture evenly into muffin cases (approx. 100g).
- Bake for 15-20 minutes until baked. Turn out to cool.
Cream Cheese:
- Place cream cheese and icing mixture in a mixer bowl.
- Whisk on high speef for approx. 2 minutes until light and fluffy in texture.
Finishing:
- Spoon or pipe cream cheese icing on top of muffin.
- Place apricot on top of the icing.
