Banana and honey muffins topped with smooth cream cheese icing, fresh bananas and whole macadamias.

Directions:
Muffins:
- Pre-heat oven to 180 deg C conventional or 160 deg C fan forced.
- Place water then Bake One! Muffin Mix in a mixer bowl.
- Beat the mixture on low speed for 1 minute.
- Scrape the bowl, continue mixing on high speed for 1 minute.
- Fold in mashed banana and honey until mixed through.
- Line standard 12 cup muffin pan with paper muffin cases.
- Spoon mixture evenly into muffin cases (approx. 100g).
- Bake for 15-25 minutes until cooked. Turn out to cool.
Macadamia and Cream Cheese:
- Place crushed macadamias in oven for 5 minutes until golden brown, let cool.
- Place cream cheese and icing sugar in a mixer bowl and whisk on high speed for 1 minute, fold toasted crushed macadamias on the cream cheese.
Finishing:
- Spoon or pipe cream cheese icing on top of each muffin.
- Arrange fresh banana slices and 1 whole macadamia on top of the icing.
