Banana and Honey Muffins 

 

Banana and honey muffins topped with smooth cream cheese icing, fresh bananas and whole macadamias.

Recipe:

 Ingredients  Makes 12  Makes 36
 Bake One! Muffin Mix  800g  2400g
 Water  330ml  990ml
 Banana, mashed  3  9
 Honey  10g  30g
 Macadamias, toasted and crushed  50g  150g
 Cream Cheese  100g  300g
 Pure Icing Sugar  40g  120g
 Banana, sliced  12  36
 Whole macadamias  12  36

Directions:

Muffins:

  • Pre-heat oven to 180 deg C conventional or 160 deg C fan forced.
  • Place water then Bake One! Muffin Mix in a mixer bowl.
  • Beat the mixture on low speed for 1 minute.
  • Scrape the bowl, continue mixing on high speed for 1 minute.
  • Fold in mashed banana and honey until mixed through.
  • Line standard 12 cup muffin pan with paper muffin cases.
  • Spoon mixture evenly into muffin cases (approx. 100g).
  • Bake for 15-25 minutes until cooked. Turn out to cool.

Macadamia and Cream Cheese:

  • Place crushed macadamias in oven for 5 minutes until golden brown, let cool.
  • Place cream cheese and icing sugar in a mixer bowl and whisk on high speed for 1 minute, fold toasted crushed macadamias on the cream cheese.

Finishing:

  • Spoon or pipe cream cheese icing on top of each muffin.
  • Arrange fresh banana slices and 1 whole macadamia on top of the icing.
