Directions:
Cupcake:

Pre-heat oven to 170 deg C conventional or 155 deg C fan forced.

Beat the mixture on low speed for 1 minute.

Scrape the bowl, continue mixing on high speed for 4 minutes.

Fold in oil, chocolate topping and 9ml of peppermint essence until mixed through.

Line standard 12 cup muffin pan with paper cupcake cases, spoon mixture evenly into each case (approx. 70g).

Bake for 25-35 minutes until baked. Turn out to cool.
Cream Cheese:
- Place cream cheese and icing sugar in a mixer bowl.
- Whisk on high speed for approx. 2 minutes until light and fluffy in texture.
- Fold in 4 ml of peppermint essence and a few drops of green colour to the desired colour.
Finishing:
- Pipe icing on top of each cupcake using a size 5 star tube.
- Garnish with a small amount of chocolate shavings on top.
