Choc Mint Cupcakes 

 
Choc mint flavoured cupcakes topped with peppermint icing and choc shavings for garnish.
 
Recipe:
 
 
 Ingredients  Makes 12  Makes 36
 Bake One! Cupake Mix  450g  1350g
 Cocoa Powder  25g  75g
 Eggs  3  9
 Water  90ml  270ml
 Chocolate Topping  20ml  60ml
 Canola Oil  120ml  360ml
 Peppermint Essence  13ml  39ml
 Cream Cheese  200g  600g
 Pure Icing Sugar  120g  360g
 Green Colour  Few Drops  Few Drops
 Chocolate Shavings  For Garnish  For Garnish
 
Directions:

 

Cupcake:

  • Pre-heat oven to 170 deg C conventional or 155 deg C fan forced.
  • Place eggs, water then Bake One! Cupcake Mix and cocoa powder in a mixer bowl.
  • Beat the mixture on low speed for 1 minute.
  • Scrape the bowl, continue mixing on high speed for 4 minutes.
  • Fold in oil, chocolate topping and 9ml of peppermint essence until mixed through.
  • Line standard 12 cup muffin pan with paper cupcake cases, spoon mixture evenly into each case (approx. 70g).
  • Bake for 25-35 minutes until baked. Turn out to cool.     

Cream Cheese:

  • Place cream cheese and icing sugar in a mixer bowl.
  • Whisk on high speed for approx. 2 minutes until light and fluffy in texture.
  • Fold in 4 ml of peppermint essence and a few drops of green colour to the desired colour.

Finishing:

  • Pipe icing on top of each cupcake using a size 5 star tube.
  • Garnish with a small amount of chocolate shavings on top.
