Directions:
Cupcakes:
- Pre-heat oven to 170 deg C conventional or 155 deg C fan forced.
- Place eggs, water then Bake One! Cupcake Mix in a mixer bowl.
- Beat the mixture on low speed for 1 minute.
- Scrape the bowl, continue mixing on high speed for 1 minute.
- Fold in oil, lemon curd and mascarpone until mixed through.
- Line muffin pan with paper cupcake cases, spoon mixture evenly into each case (approx. 70g).
- Bake for 25-35 minutes until baked. Turn out to cool.
Cream Cheese:
- Place cream cheese, icing sugar and lemon juice in a mixer bowl.
- Whisk on high speed for approx. 2 minutes until light and fluffy in texture.
Finishing:
- Spoon or pipe cream cheese icing on top of each cupcake.
