Pumpkin and Feta Scones 

 

Light, savoury scones with pumpkin and feta.

Recipe:

 Ingredients  Makes 12  Makes 36
 Bake One! Scone Mix  600g  1800g
 Water  270ml  810ml
 Pumpkin Puree  60g   180g
 Pumpkin Julienne  175g  525g
 Chopped Feta Cheese  150g  450g
 Garlic Powder  25g  75g
 Milk  For Brushing  For Brushing

Directions:

  • Pre-heat oven to 210 deg C conventional or 190 deg C fan forced.
  • Place water then Bake One! Scone Mix in a mixer bowl.
  • Fold the mixture on low speed for 2 minutes and scrape the bowl.
  • Add pumpkin puree, pumpkin julienne, feta and garlic powder to the dough and mix for another minute.
  • Flour the workbench well.
  • Mould the dough into a ball and rest the dough for 5 minutes.
  • Re-flour the workbench, then roll the dough into the desired thickness.
  • Cut out dough pieces with scone cutter (approx. 80g).
  • Place scone pieces on greased or floured baking tray.
  • Brush the scone top with milk.
  • Bake in the pre-heated oven at 210 deg C for 15 minutes or until golden.
