Spiced Fig and Honey Bran Muffins 

 

Delicious honey bran muffins with juicy, diced figs throughout.

Recipe:

 Ingredients  Makes 12  Makes 24
 Bake One! Bran Muffin Mix  1200g  2400g
 Ginger Powder  12g  24g
 Water  480ml  960ml
 Canola Oil  120ml  240ml
 Honey  60g  120g
 Dried Figs, chopped  250g  500g
 Dried Figs, diced  For Garnish  For Garnish

Directions:

  • Pre-heat oven to 190 deg C conventional or 170 deg C fan forced.
  • Place water, oil then Bake One! Bran Muffin Mix and ginger powder in a mixer bowl.
  • Beat on low speed for 1 minute.
  • Scrape the bowl, continue mixing on low speed for 3 minutes.
  • Fold in chopped figs until mixed through.
  • Line Texas muffin pan with large paper muffin cases.
  • Spoon mixture evenly into muffin cases (approx. 150g).
  • Top with a few pieces of sliced dried figs.
  • Bake for 35-38 minutes until baked. Turn out to cool.
